On May 25th Ju 88s of I./K.G.77 sink brit. destroyer west of Ireland.

While there may be other information of interest on this site, to reach the above reference, I did the following:

1. Clicked "Search"

2. Clicked "Alphabetischer Index"

3. Clicked "Marinearchiv"

4. Clicked "Chronik des Seekriegs 1939-45"

5. Clicked "Mai" under 1941

This looks like it is a potentially very useful site, although it is unclear if there is much Luftwaffe material here.

It was a He 111 form I/KG 100 that sunk HMS Mashone, according to books I have.

I don't remember if the name of the pilot is in the books I have, but I can check if you like?
